First, set up your note-taking sheet. Next, weigh and record your ingredients. Finally, adjust the recipe as you like.
Prepare Your Note-Taking Sheet for Accurate Ingredient Measurements
Before you start weighing ingredients, it’s crucial to set up your note-taking sheet for successful recording. Whether you’re baking a familiar recipe or a new one, minimizing outside tasks helps focus on the bake at hand. Preparing your note sheet in advance will help you in the long run. Your note sheet needs four columns: ingredient name, the volume amount required from the recipe (like 1 ½ cups), space for the weight you record when measuring the volume, and a column for any important notes you want to remember.

For small ingredients, such as ½ teaspoon of baking powder, it's often better to use volume measures since they may not register accurately on a scale. Once your note sheet is prepared, you can begin weighing the ingredients.
Weigh Ingredients Accurately for Perfect Recipes
Weigh all your ingredients as you create your recipe, just like you would with volume measurements. There are two methods for weighing your ingredients. The first method involves placing your container on the scale, zero ing it out, and then adding ingredients using your volume measure. To "zero out" means placing a bowl on the scale and resetting it to display zero. Record the weight shown on the screen (I prefer grams) in the weight column of your note-taking sheet for that ingredient. The second method is helpful if you are using heavy containers that exceed your scale's weight capacity. In this case, place the container holding the ingredient (e.g., a flour bag, an olive oil jar, or a honey container) on the scale, zero it out, then add the ingredient to the mixing bowl. Re-weigh the container after adding all the ingredients using volume measure; it should show a negative number, indicating it is lighter after removing some of the ingredients. Record the negative number as a positive value next to the appropriate ingredient on your note-taking sheet. Regardless of whether you use the first or second method, repeat this process for all ingredients in the recipe.
